Summer Pesto Pasta Salad

Summer Pesto Pasta Salad 15 minutes - 4 servings

Ingredients

Salad Pesto Dressing
  • 1 tbsp balsamic
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes
  • Salt and pepper, to taste
  • 1 tbsp pasta water
  • ¾ jar of Sacla’s Wild Garlic Pesto

Salad Ingredients
  • 2 cups of cooked pasta
  • 20 cherry tomatoes, halved
  • ½ cup strawberries, cut into cubes
  • ¼ cup red onion, soaked in ice water and pat dry
  • ½ cup crispy bacon/prosciutto flakes
  • 1 tbsp Italian parsley, chopped
  • ½ cup mini mozzarella balls
  • Optional: add cheese, like small mozzarella balls or meat of choice

Instructions

  1. Toss prosciutto in balsamic and bake at 400F for around 9-12 minutes until crispy. Then crumble up and set aside.
  2. Prepare all salad ingredients: wash and cut vegetables. Cook pasta following package instructions.
  3. Whisk all ingredients for the pesto dressing together in a bowl.
  4. Next add all salad ingredients to the bowl and toss. Enjoy!
