Ingredients
- 500 grams of Sacla Tomato & Roasted Garlic Sauce
- 4 tablespoons olive oil or butter
- 1 bay leaf
- 1 tablespoon chopped ginger
- 1 tablespoon sliced garlic
- 1/2 cup roughly sliced onion
- 1/2 cup carrot, diced
- 1/2 Cup water water
- 1/4 cup full-fat coconut milk, more to drizzle on top when serving
- Salt to taste
- Finn Crisp Crackers to Dip
- Basil leaves to serve
Instructions
Prep Work For Tomato Soup:
- Roughly chop onion, garlic, ginger, tomatoes, and carrots before starting the soup.
How To Make Fresh Tomato Soup:
- Heat oil in a saucepan or a heavy-bottom pan.
- Add onion, and sauté for 2-3 minutes.
- Next, add the chopped carrot, bay leaf, chopped garlic, ginger, and sauté for 2–3 minutes.
- Add the Sacla Tomato & Roasted Garlic Sauce, and water, and simmer covered for 5 minutes on low-heat.
- Once the carrots turn soft, remove the lid. Gently mash the vegetables using the back of the ladle/spoon. Turn off the heat.
- Transfer them to a blender and make a smooth puree.
- Transfer back into the saucepan. Season to taste, and add coconut milk. Simmer the tomato soup for 3–5 minutes over low heat. If the consistency seems too thick, add a little bit more water, if it’s too runny cook it down for a little bit.
- Serve tomato soup with Finn Crisp Crackers, a drizzle of coconut milk, and chopped fresh basil leaves.
